Each leg is marinated in a traditional family brine recipe for 48-52 hours, carefully turned to ensure perfect flavor. After brining, the hams are hung for 6 hours before being naturally wood-smoked for 12 hours using premium Australian timbers like ironbark and blackbutt. The result is a truly remarkable ham that celebrates quality and craftsmanship
