Additional Information About Weight Loss

When hanging beef for dry aging, the percentage of weight lost typically falls between 10% and 20%, depending on several factors, such as:

  • Length of Hanging Time: For a standard 14-day aging period, the weight loss is usually around 7% to 10%. For longer aging periods, such as 21 to 30 days, weight loss can reach up to 20%.
  • Environmental Conditions: Factors like temperature, humidity, and airflow affect the rate of moisture loss. Optimal conditions (~1°C/34°F and 80-85% humidity) minimize excessive weight loss.
  • Type of Cut: Bone-in cuts generally lose less weight compared to boneless cuts. Leaner cuts will also lose less weight than fattier ones.
  • Trim Loss: In addition to moisture evaporation, the dried surface of the beef (the "pellicle") must be trimmed before sale or processing. This can account for an additional 5% to 10% loss in usable weight.

Total Yield Loss: Combining moisture loss and trim loss, total yield loss after hanging can range from 15% to 25% of the carcass weight.

What is “dressed weight”? and why is it important?
When buying a Whole, side, Eighth or quarter) of a cow/sheep etc, the final weight you receive will be less than the total listed by the farmer.
Dressed weight, otherwise known as “hanging weight,” is the weight of the carcass after the animal has been killed and the head, blood, and offal removed.
This dressed weight includes all the meat, fat, and bones from the “side” of an animal.
From here, the butcher will prepare your “side” or “quarter” based on your specifications.
Some loss of weight can occur through the process of “dry aging,” where the meat is allowed to safely “age,” tenderizing the meat but resulting in some weight loss.
Cut specifications can also impact the final weight. For example, T-bones with the bone removed will weigh less than bone-in cuts.
Dressed weight is used because it is the most fair and most correct method of weighing an animal for processing.
On average, “boxed weight” can be 20% to 30% less than dressed weight.

This has led us to establish a commercial and stud herd of Speckle Park cattle and focus on sustainability and traceability and seen the development of a small on-site butcher shop to sell to the public. Farmed by Nicky and Lashay, processed locally at Radfords and then butchered by Nicky’s brother Bryan and sold by Nicky’s Son Jim, aiming to bring our beef and pork produce from the farm gate to the consumer.
